Bridge’s Chicken Parmesan

I am always looking for easy recipes. Sometimes I find them, and sometimes make them up. This recipe is partly made up. I basically just typed in “Baked Chicken Parmesan” in Google and then looked at four or five recipes until I thought I could wing it.

Then I winged it.

I was lucky.

It turned out delicious. Even my super picky kids even said they loved it. I served it with a spiced wild rice I made out of a box. I have NEVER claimed to be a chef.

*Chicken Tenders (1- 1 ½ lbs)
*Eggs (2)
*Milk (1/4 cup)
*Bread Crumbs (1 ½ cups)
*Tomato Sauce (2 small cans)
*Garlic Powder (1 tsp)
*Oregano (1 tbsp)
*Basil (1 tbsp)
*Pepper (1 tsp)
*Parmesan Cheese (½ cup)

Preheat oven to 400°F.

Beat eggs and milk together in bowl.

In another bowl, mix bread crumbs and spices.

Dip chicken in egg and milk mixture.

Dip chicken in bread crumbs and spice mixture, coat the chicken well.

Place chicken in glass baking dish lightly coated with cooking spray.

Bake for 20 minutes uncovered.

While chicken is cooking heat tomato sauce in sauce pan.

Spoon tomato sauce over chicken.

Return chicken to oven and bake for an additional 10 minutes. Sauce should be boiling.

Sprinkle chicken with parmesan.

Variation: Add ½ of spices to the tomato sauce.

Variation: Use mozzarella cheese instead of parmesan.

    You have to wait a few days for it. I suddenly got all inspired and wrote THREE posts in one day.

    Luckily I can post date them.

    Oh that post dating stuff is cheating. Seems like I always have to dip them in the egg and then bread crumbs twice to get it to stick. Did you?

    Or you could go my route for this…

    1. Deep fry chicken patties (defrosted)… ignore the fact that it isn’t one of the cooking options on the package.
    2. Open some Ragu… any flavor will do. Spoon a light layer over the chicken patties
    3. Coat the top of the chicken patties with shredded mozerella. If you can still see chicken or sauce, you don’t have enough.
    4. Bake until the cheese melts.
    5. Serve with heavily buttered garlic cheese toast — yes more mozerella.
    6. Visit hospital for coronary bypass.

    Throw a jar of Marinara in your crock pot over how ever many chicken breasts you want… cook for how ever long you are working. Serve over cooked spagetti with a little shredded mozz and parm. Oh and get a really nice Crumb Brothers Baguette… yummy!
    My family is also a big fan of Aaron’s version. With out the trip to the hospital… at least not yet…
